 
SPICY CUCUMBER SALAD
(Yam Thaeng Kwa)
A simple quick and easy salad that is sure to please, If you are a vegan, substitute the fish sauce with light
soya sauce.
Ingredients:
2 medium cucumbers
1 Tbsp sugar
2 Tbsp white vinegar
2 red chillies, minced
100 gm crushed roasted peanuts
3 shallots, sliced
1/2 cup coriander leaves, chopped
1 tsp fish sauce
Method:
1. Peel cucumbers, slice in half lengthways and remove seeds with a spoon.
2. Slice into 1/2 inch slices.
3. Dissolve sugar in vinegar and toss cucumber in the mixture.
4. Mix well with minced chilli, crushed peanuts, shallots, fish sauce and coriander leaves.
5. Marinate for 1 hour.
6. Serve and indulge.
