Pak Pad Gup Nua
(Thai stir fried beef with broccoli)
A Thai version of a Chinese classic

Ingredients
1-6 cloves garlic, finely chopped
8 oz. Lean beef, sliced into thin strips
1-3 tbsp. Oyster sauce (to taste)
1 tbsp. Nam Pla (Fish sauce)
1 tbs. Sugar
20 oz/ broccoli florrets

Let's Cook
In a hot, well-oiled wok or skillet, stir fry garlic. Add bif and stir fry to desired meat tenderness. Add fish sauce and sugar. Mix well. Add broccoli (If you wish to use the broccoli stalks as well, blanch in advance). Add oyster sauce. Toss and serve.

TIP:
If you find you've used too much oyster sauce, add a bit more sugar to take away the saltiness.
